The roaster
A five kilo drum and a lot of Tuesdays.
Rami opened the room in 2016 with a secondhand grinder and one shelf of beans. The roaster arrived a year later, and now everything we pour is roasted eight steps from where you drink it.
We buy small, usually one or two bags of a lot, which is why the list changes often and nothing sits long enough to go flat. Come in on a Tuesday morning and you can smell it from the corner.
Four years I have been coming here, and I still cannot get a seat after ten.
